Crunchy summer salad of green beans, juicy tomatoes, sliced mushrooms, fresh herbs, and parmesan.

This salad brings together delicious, seasonal ingredients in a simple and tasty way. Crunchy green beans and juicy tomatoes with a shaving of parmesan to top it off, make this healthy salad have a satisfying twist.

Use a vegetarian alternative to parmesan if desired.

Ingredients

  • Button mushrooms, sliced

  • Green beans, trimmed
    100g
  • Cherry tomatoes, halved
    50g
  • Olive oil
    15g
  • Parsley, chopped
    2g
  • Juice ½ lemon
    10g
  • Basil, chopped
    2g
  • Parmesan (or vegetarian alternative), shaved

Cooking Method

  1. In a bowl, toss the sliced mushrooms with half the lemon juice and set aside (this helps to soften the mushrooms). Blanch the beans in boiling water for 5 minutes, then drain and cool in a bowl of cold water.
  2. Toss the beans and mushrooms together in a bowl with the herbs, tomatoes, remaining lemon juice and the olive oil. Scatter over the shaved parmesan to serve.

Green beans

Mushrooms

They provide selenium, a mineral which is important for maintaining immune health, as well as vitamin D which is essential for bone health. They're also a source of protein and fibre. 

Tomatoes

A summer seasonal staple. Tomatoes provide vitamin C as well as the antioxidant lycopene and give this salad a pop of colour. 

Parmesan

A hard cheese providing calcium as well as essential fats. Only a small amount is used to keep the fat content of the salad down whilst also providing an indulgent twist.
